Hoisin sauce, oyster sauce
Chinese five-spice powder

Instructions:
Prepare the Dough:
In a large mixing bowl, combine the wheat flour and potato starch. Gradually add hot water while kneading the dough until it becomes smooth and elastic.
Incorporate the pork lard or vegetable oil into the dough, ensuring it's well combined. Cover the dough and let it rest for about 30 minutes.
Make the Filling:
In another bowl, mix together the minced pork, finely chopped carrot, wood ear fungus, onion, Chinese mushroom, and dried shrimp.
Season the filling mixture with salt, pepper, sugar, chicken stock, hoisin sauce, oyster sauce, Chinese five-spice powder, Chinese rice wine, and sesame oil. Stir until all the ingredients are evenly combined and flavorful.
Shape the Dumplings:
Take a small portion of the dough and roll it out into a thin circle. Place a spoonful of the filling mixture in the center of the dough circle.
Fold the dough over the filling to form a half-moon shape, then pinch the edges together to seal the dumpling. Repeat this process until all the dough and filling are used up.
Steam the Dumplings:
