I love this rice sooooo much. I make it several times a month if not weekly. I serve it with curry, stew and chili. It's also great for fried rice and freezes really well.
Into an Instant Pot or other pressure cooker add:
* 1 1/2 cups rinsed basmati or jasmine rice
* 1 can of full fat coconut milk
* 1/2 can of hot water
* 1 tsp sugar
* 1/4 tsp salt
Whisk well to combine.
Put on your lid and set it to sealing.
To cook: manual settings - on high pressure - for 6 minutes.
Once it finishes cooking, turn the pressure cooker off and let the pressure automatically release for at least 5 minutes.
Then release the remaining pressure manually.
Serve and enjoy!
