The humble celery need not be humble any longer. Here is a simple and delicious celery soup recipe that enables our little friend to stand out as the star. I happen to use celery root in this soup, but you can just as easily use celery stalks. I prefer the root, as the flavor is a bit more mild, and the texture will give a more body to the soup.
I also add a potato, as well as cream to thicken the soup, and create that smooth creamy texture. Once blended the celery soup has a snowy white color that is absolutely beautiful, especially when garnished with some green herbs, like the chives I've used. This soup recipe is one of my favorites and I hope you love it too.
