Night time bed-wetting usually isn't something to be concerned about until a child is 6 years of age or older, and for sure not when a child is first learning how to be potty-trained. You mentioned that you have a 2 year old son who still wets the bed at night. And often times night time control lags way behind day time control, and it can even take up to months before a child is staying dry at night, even after conquering it during the day. So the fact that he's still having accidents at night is very normal. Now there's many different ways to tackle this. Some parents think that they want to put them in diapers at night till they stay dry, and then they start taking diapers off and putting underwear on. Others make the transition with pull-ups or something in between a diaper and underwear. You mentioned that you've been using plastic underwear, but it's just not quite doing the trick, but he won't wear pull-ups. Now it's totally up to you about whether or not you want to use pull-ups, and even experts disagree on whether or not they're a good thing. Some say they're a great way to transition, and it helps parents through the process, as well as the child, because you're not up every night changing bedding. Others say that it's kind of a safety net for the child. It also kind of depends on how you present it to your child. So if there's absolutely no way he's going to wear them, then it's probably not an option for you. But for many parents, this is a good thing, and maybe you could approach it in a different way with him, and he would wear them at night. And then once he starts keeping those dry, then you can put underwear back on.
Now no matter what, through the process it's always good to praise him and not punish him for wetting the bed. This may cast negative feelings onto potty-training for him, and may make it harder for him to conquer his inability to control himself at night. He may feel ashamed and sad and distant from you when he does it, or be hesitant to come tell you when he wets the bed. And as a parent of course, that's the last thing that we want to have happen, but it's also easy to get frustrated when accidents happen. Remember that they're just that - accidents, and he will grow out of it eventually.
