One of our subscribers commented that the a good ratio for the vegetables are : 2:1:1 ratio. 50% onion 25% carrot 25% celery.
you could use fat elements as well to get a better taste from your vegetables which is true. if you wish you could use butter or olive oil and make them "sweat" gently for a few minutes before adding the water.
Keep in mind that this a simple version of the bouillon de légumes or fat free vegetable stock. There are many variants that exist so feel free to add more vegetables but refrain form using, tomatoes, starchy vegetables, and any vegetables that would color your stock (like beetroot for example)
in this video I used:
1 Leek
3 Turnips
2 Carrots
Half a celery
a freshly made bouquet garni
half an onion
5 cloves
a pinch of rock salt and a few black peppercorns
