1-2 Simple Cooking: How to Pan-Sear a Steak (See Recipe below)

Serving size: 1 to 2 people
Ingredients:
- 16 oz rib eye
- kosher salt
- freshly cracked black pepper
- 2 tbsp unsalted butter

Directions:
1) Preheat oven to 400F.
2) Dab excess moisture off steak using a paper towel.
3) Evenly sprinkle surface of steak with kosher salt.
4) Evenly sprinkle surface of steak with freshly cracked black pepper.
5) Carefully flip steak over.
6) Repeat sprinkling surface of steak with kosher salt and pepper.
7) Place seasoned cast iron skillet over medium high heat.
8) Melt 2 tbsp of unsalted butter in skillet until bubbling.
9) Place steak onto hot skillet.
10) Sear for 2-3 minutes until it forms a nice, golden brown crust.
11) Carefully flip steak over.
12) Immediately put cast iron skillet with steak into your preheated oven. Make sure to use your oven mittens! Cast iron skillet will be VERY HOT!
13) Cook steak at following times depending on how rare or well done you prefer your steak: Rare: ~3 minutes; Medium Rare: ~4-6 minutes; Medium: ~6-8 minutes; Well-done: ~9-10 minutes
14) Remove steak pan on to plate or cutting board.
15) Let steak rest for 10 minutes before cutting to allow juices to settle.
16) Slice steak against the grain and serve immediately.
