Pancit Malabon
Pancit malabon is very similar to pancit palabok. Their only difference is the noodles used. While pancit palabok uses bihon, pancit malabon features thicker rice noodles.
Ingredients of Pancit Malabon
250g pancit malabon noodles
2 tbsp cooking oil
1 tbsp annatto seeds
1/4 kilo ground pork
1 cup tinapa flakes
1/2 tsp pepper powder
1 tbsp patis
2 cups water
Slurry (2tbsp cornstarch dissolved in 3tbsp water)
1 1/2 pounded chicharon
Toppings:
Boiled egg, sliced
Chicharon, pounded
Green onions, chopped
Fried squid
