Today we're making kimchi fried rice. This dish is so delicious and it's packed with flavor and spice! Best part, kimchi fried rice only requires 5 ingredients! Let's get cooking!!

Ingredients:
• 1 cup rice
• 1 green onion, finely chopped
• 1/2 cup kimchi, roughly chopped
• 1/4 cup spam, cubed
• 1 egg, whisked
• pinch of salt
• 1 tbsp gochujang
• 1 tbsp light soy sauce
• 1 tbsp oil
• 1 tsp sesame oil
optional: dried shredded seaweed for garnishing

Instructions:

1. Start by cubing the spam into roughly ½ inch pieces.
2. Next, roughly chop up your kimchi into small pieces.
3. Heat 1 tbsp of oil over med-high heat. Add in your egg & scramble it.
4. Cook the egg until it’s approximately 90% cooked through & then set it aside for later use.
5. Add in your spam & soy sauce. Let the spam cook until the sides just start to brown- this will take a few minutes, stir occasionally to ensure the spam doesn’t burn.
6. Add in your kimchi & stir fry it with the spam for 3-4 minutes.
7. Once the kimchi is fragrant, add in your rice & start breaking it up into small pieces.
8. Add the gochujang & mix everything together well.
9. Once everything is mixed & well-combined, add in your scrambled egg. 10. Continue mixing everything together. This is a good time to taste the kimchi fried rice & you can adjust the seasoning & spice level to your personal preference.. I’m adding a pinch of salt.
11. Give everything a few more mixes & add in some sesame oil & half of your chopped green onion.
12. To garnish, sprinkle the rest of your chopped green onion onto your fried rice & a few pieces of dried shredded seaweed and the dish is ready to eat!
