☘️☘️☘️ BAKED AUBERGINES/ EGGPLANTS ☘️☘️☘️
These stuffed baked Aubergines are one of my all-time favorites. They are so easy to make and taste amazing! Every time I make them, they disappear from the dinner table first! Even my meat-loving friends always ask for them! And best of all, they are made without frying, making them a healthy dinner option.

💚Healthy 🍏 Vegetarian 🍏Vegan Friendly 💚 Low Carb 💚 Easy 💚 Aubergine Recipe
🕒COOKING TIME : 1 -1.5 hour ( depending on the size of the Aubergines)
☘️☘️☘️ INGREDIENTS ☘️☘️☘️
✅MAIN INGREDIENTS:
►2 Medium to Large Aubergines
►3 Carrots
►1 large Green Pepper + 1 Red Pepper
►Spring Onions to taste
►Garlic 1-2 Cloves (or more) per Aubergine
►Red Pesto 225g
►100 g grated Cheddar Cheese for topping
✅INGREDIENTS FOR TOMATO SAUCE :
►Tomato Passata ( Sieved Tomatoes ) 500 ml
► Extra Virgin Olive Oil ( 5 Tb Sp )
►Sugar 1 Tb Sp
►Salt to Taste
►Ground Black Pepper 1 tsp
►Italian Dry Herbs 1 Tb Sp
✔️RECIPE TIPS:
☘️ Cook Aubergines until very soft, increasing cooking time, if necessary
☘️ This dish tastes even better the next day, eaten hot or cold
☘️ Use Vegan Cheese for a delicious vegan option
