Rainbow rice is a new twist on the basic keema rice dish, where we add layers of flavours and colours to this delicious rice recipe. RAINBOW RICE
2 ½ cup rice soaked and boiled ( 5 cups boiled)
1. Boil rice and divide into 5 equal portions.
Green Layer
1 bunch coriander
½ bunch mint
2 green chili
3-4 cloves garlic
1 tsp cumin
2 tbsp shredded coconut
2 inch red pepper
Salt
3 tbsp water
1. Blend together all ingredients together to create a green chutney.
2. Mix 1 cup of chutney with 1 portion of rice.
Orange Layer
1 cup cooked keema (mince meat)
1. Mix 3rd portion of rice with keema and set aside.
Yellow Layer
¼ cup milk
4-5 strings saffron
Pinch yellow food colour
1. Combine ingredients.
2. Mix ingredients into the 4th portion of rice.
Red Layer
4 tbsp ketchup
3 tbsp chili sauce
1 tsp red food colour
1. Mix 5th portion of rice with ketchup, chili sauce, and red food colour, set aside.
1. Take a big bowl and brush with oil.
2. Add 1st portion of plain boiled rice and pat down.
3. Add the 2nd portion of green layer rice and pat down.
4. Add the 3rd portion of orange layer rice and pat down.
5. Add the 4th portion of yellow layer rice and pat down.
6. Add the 5th portion of red layer rice and pat down.
7. Cover bowl with foil and bake for 20 mins.
8. Flip the bowl carefully into a serving dish.
9. Lastly add sliced eggs to the top and serve. Enjoy your rainbow rice and tell us how it was!
