Ingredients:
- 4 medium-sized eggplants,
- 4 fresh peppers (your choice of mild or spicy),
- 2 bulbs of garlic,
- 100 grams of fresh cilantro,
- 100 grams of fresh parsley,
- Red pepper powder, salt, turmeric, coriander seeds, powdered angelica, dried mint, and tarragon (all to taste),
- Vinegar (enough to cook the eggplants and cover the mixture).
Instructions:
First, chop the eggplants into your preferred size. Cook them with a bit of vinegar for about 10 minutes. While they’re cooking, chop the garlic and green peppers. Finely chop the parsley and cilantro as well.
Once the eggplants are cooked, let them cool. Now, it's time to mix everything together! Add the chopped garlic, peppers, and herbs, along with red pepper, turmeric, coriander seeds, powdered angelica, dried mint, tarragon, and more vinegar. Give it a good stir to make sure everything is well combined.
Pour the mixture into a container and let it sit in the refrigerator for at least 24 hours to develop its flavors. And that’s it! Your delicious Persian pickled eggplants are ready to enjoy.❤️❤️❤️
