Mutton Brinjal and Potato Curry or Gosht Aalu Baingan from Maimoona Yasmeen’s Recipes

Ingredients:
Mutton: 100 grams
Brinjals (baingan): 200 grams
Potatoes: 200 grams
Fenugreek leaves: 1 tablespoon
Onions: 100 grams or 1 big onion
Ginger garlic paste: 1 teaspoon
Salt: 1 teaspoon
Turmeric powder: ½ teaspoon
Red chilli powder: 2 teaspoons
Cooking oil: 2 tablespoons
Chopped coriander: a handful
Whole green chillies: 3
Procedure:
1. To a cooking pan, add sliced onion, add mutton, ginger garlic paste, salt, turmeric powder, red chilli powder, oil and add one cup of water.
2. Mix well and close the lid.
3. Cook on low flame till the mutton gets tender and till the water dries up.
4. Stir fry till the oil separates. Add small brinjals, each divided into 2 halves (If you are using big brinjals, divide each into 4 halves).
5. Add peeled potatos cut into medium sized pieces.
6. Add fenugreek leaves. Stir fry for one minute.
7. Add one cup of water and close the lid.
8. Cook on medium flame till the brinjals and potatoes get tender.
9. Add chopped coriander and whole green chillies.
10. Close the lid and simmer for one minute.
Gosht Aalu Baingan is ready. Serve with Bagara khana or Plain rice and Khatti dal.
