Borani Banjan, Serves 2-4
*INGREDIENTS*
2 Eggplants
Oil, for frying
Tomato Sauce:
2tbsp Oil
4 Cloves Garlic
1 Can Chopped Tomatoes
1tbsp Tomato Paste
1/2tsp Turmeric
1tsp Salt
1/2tsp Black Pepper
1/2 Cup Water (or less if not required)
Yoghurt Sauce:
1 Cup Yoghurt
1 Clove Garlic
Extras:
1tbsp Dried Mint, to Garnish
