Smoked Jalapeno Popper Stuffed Chicken
4 Boneless Chicken Breasts
6 oz Cream Cheese - softened
1 C Cheddar Cheese - shredded
1 C Monterey Jack - shredded
1 Medium Jalapeno - finely diced
1 lb Bacon
In a medium sized bowl mix together the cream cheese, cheddar, monterey jack & jalapeno
until well combined
Make a pocket in the chicken breast, try not to cut through all the way. Stuff each breast with the
cream cheese mixture. Wrap each breast with bcon and secure with toothpicks.
Grill should be between 375 - 425 F.
We used apple wood for flavor.
Place breasts on grill for indirect heat. Cook time approx 45 minutes.
Internal temperature should be 160 F
