My 25 Days of Christmas!
Day 16: Sticky Braised Red Cabbage.
Ingredients:
- 1 red onion
-1 Pink Lady Apple
-1 red cabbage
-2 star anis
-50g dried cranberries
-700g red wine
-700g port
- Salt (to taste)
- Sugar (to taste)
- Pepper (to taste)
- Red wine vinegar (to taste)
Method:
- Finely slice your apple, onion, and red cabbage. Then sweat lightly in a medium sized saucepan for 5 to 10 minutes.
- At this stage add the rest of your ingredients, give a quick stir and cook for 25mins with a lid on, before removing the lid and reducing on a high heat for 10mins until thick and glossy.
-When you have a thick, rich and jammy consistency set aside, Adjust seasoning and serve.
