Ingredients:
Sponge dough:
bread flour 700 grams ( 5 2/3 cup)
sugar sugar 50 grams ( 1/4 cup)
instant yeast 18 grams ( 6 tsp)
warm water 460 grams ( 460ml)
mix all ingredients until it forms a dough and let it rise for 1 1/2 hours. (the dough should doubles after 1 1/2 hours)
Main Dough:
bread flour 300 grams (2 2/3 cup)
sugar 84 grams ( 1/3 cup)
salt 20 grams ( 4 tsp)
powder milk 37 grams ( 4 tbsp)
full cream milk 100ml or grams (no need to be warm)
water 40 ml or grams (normal water lang)
egg 2 large ( 114 grams)
butter 120 grams ( 1/2 cup + 1 tsp)
Spanish filling:
1/2 cup brown sugar
1/2 cup all purpose flour
1/2 cup butter or margarine (use star margarine for better taste.
Toppings:
cheddar cheese (grated) and stick for fillings
For ensaymada star margarine for toppings and sugar
add grated cheese for special ensaymada.
