This video is to show you how we make house-made all beef sausage, using brisket trim, here at Screech's Smokehouse BBQ. This is more of a "how we do" and less of a "how to" video. However, you can follow these steps to make tasty sausage at home using this recipe and minimal equipment. This is a basic recipe we got from Bradley @Chuds BBQ and can be adjusted to your liking as we have done.
Full recipe for sausage:
7lbs beef and 3lbs beef fat
125g milk powder
12g pink curing salt (prague powder #1) = approx. .25% by weight
1lb of water = approx. 10% by weight
90g kosher salt
25g ground mustard
25g granulated garlic
15g black pepper
12g paprika
5g cayenne
5g chili powder
