Smoked pork knuckles:
Pork shanks - four pieces;
Carrots - four pieces;
Onions - four pieces;
Ginger-60 g;
Garlic-1 head;
Badian- three sprigs;
Rosemary-three sprigs;
Thyme or thyme-one bunch;
Red basil - one bunch;
Water - 5 liters;
Dark beer - 5 liters.
We prepare a broth of carrots, onions, ginger, badiane, rosemary, garlic, fresh herbs, water and dark beer. In this broth over medium heat, simmer the pork knuckles for 90 minutes. Dry the meat with napkins and smoke on fruit sawdust by cold smoking for at least 12 hours.
Modern Ukrainian halushki (steamed buns):
Flour - 360 g;
Leavening agent - one teaspoon;
Dry yeast - one teaspoon;
Sugar - 35 g;
Vegetable oil (olive oil) - 35 g;
Warm water - 180 ml;
Milk - 20 ml.
Salt - 1 pinch.
Knead all the ingredients and send to a warm place for 90 minutes. After that knead the dough once again and roll it out. The height of the dough should be maximum 1 cm. Cut out circles with a diameter of 8 cm, grease with vegetable oil and fold in half. Cook the buns in a steam bath under a lid for 12 minutes.
