This delicious sweet n sour eggplant pickle is my family's favorite.It goes with all types of meals or you can have on its own with garma garam roti or plain boiled rice.
I think its a sweet n sour chutney but the ingredients call for pickle 🤷♀️
Ingredients..
1 kg eggplants
1 cup mustard oil
1 cup white vinegar
1⅓ cup brown sugar
¾ tspn salt
½ tspn each of cumin seed, black seed, chilli powder, ginger powder, turmeric, fennel seed, mustard seed, fenugreek seed
Note..You may adjust the spices according to your taste.
Method..
Wash, peel and slice the eggplants. Blanch them, strain and return to pan. Cook them with above mentioned ingredients till all moisture dries up.
