What makes Ambur Biryani so special? Is it the appealing colour? Is it the fragrant aroma? Is it the taste loaded with flavours? "All of the above" would be the answer. It is a total package! If you have had it once, the taste will linger for a lifetime; making you wonder about it's unique recipe. For all such curious souls, here's presenting the distinct recipe of the famous, Ambur Chicken Biryani.

Chicken (ചിക്കൻ) - 1 kg
Kashmiri Dry Red Chilli (കാശ്മീരി ഉണക്കമുളക്) - 12 Nos (25 gm)
Seeraga Samba Rice OR Kaima Rice (Jeerakasala Rice) - 1 kg
Water (വെള്ളം) - 2½ Litre (10 Cups)
Refined Cooking Oil (എണ്ണ) - ½ Cup (125 ml)
Ghee (നെയ്യ്) - ¼ Cup. (60 ml)
Cardamom (ഏലക്ക) - 10 Nos
Clove (ഗ്രാമ്പൂ) - 10 Nos
Cinnamon Stick (കറുവപ്പട്ട) - 3 Inch Piece
Star Anise (തക്കോലം) - 4 No
Onion (സവോള) - 4 Nos (500 gm)
Salt (ഉപ്പ്) - 2+1½ Teaspoons + 3 Tablespoons
Garlic Paste (വെളുത്തുള്ളി അരച്ചത്) - 5 Tablespoons (75 gm)
Ginger Paste (ഇഞ്ചി അരച്ചത്) - 5 Tablespoons (75 gm)
Tomato (തക്കാളി) - 3 Nos (300 gm)
Mint Leaves (പുതിന ഇല) - ½ Cup
Coriander Leaves (മല്ലിയില) - ½ Cup
Lime Juice (നാരങ്ങാനീര്) - ½ Tablespoon
Curd (തൈര്) - ½ Cup
Hot Water (ചൂടുവെള്ളം) - 2 Cups (500 ml)
