This Spicy Italian Sausage and Peppers Pasta is one of my all-time favorite PWWB recipes! It's a recreation of one of my favorite restaurant pasta dishes here in the Twin Cities, Broder’s Pasta Bar's Rigatoni con Salsicce. Broder's version has simmered-all-day flavor that's absolutely crave-worthy, and I really wanted to try to create that restaurant-worthy richness at home in a fraction of the time.

After tweaking & perfecting through countless batches, this Spicy Italian Sausage and Peppers Pasta recipe is the result!

There are 2 main secrets:
1. Inherently flavorful spicy Italian sausage infuses the sauce with luscious texture and provides the perfect level of heat to offset the natural sweetness of onion and bell pepper.
2. The concentrated flavor of a generous amount of tomato paste and the brightness of white wine create a sauce with rich depth of flavor without an hours-long simmer.
