On this weeks video- we are going to learn to do an easy trim on a prime brisket!
Start with a COLD (not frozen) brisket -
You will need-
Sharp knives
Gloves
Trash Can
Cutting Board
The system is pretty simple follow these steps-
1) Size it up- look it over and get an idea for what you'd like to cut off, look and feel
2) Start on the lean side, get that hard fat off, then- most of the loose fat off as well.
3) Trim the edges, color changes from packaging and loose fat/meat will hang out here.
4) Flip it over and look the fatty side over. Remove all hard fat- then follow the meat for a uniform 1/4-1/2 inch thickness
then, you're ready for to rub your meat!
