Galettes have BLOWN UP this quarantine and I have hopped on the bandwagon folks. I have made so many galettes recently and I have zero regrets.

Hi Foodie Friends! In today's video, we will be making a beautiful mixed berry galette. What is a galette? I call it the pie's bougie big sister. It's an open faced rustic pie that looks like it was made by a prestigious French pastry chef :O But...in this video, you'll see how easy this beautiful pie is to make. The crust is flaky and buttery and the filling is so fresh and fruity. Recipe below:

INGREDIENTS

Crust:
1 1/2 cups All Purpose Flour
1/2 cup Sugar
1/4 tsp Salt
1/2 cup unsalted butter (cold)
5 tbsp ice cold water
1 large egg Slivered almonds to sprinkle

Filling:
2 cups Mixed Berries
3 tbs Sugar
1/2 Lemon
1 tsp Vanilla Extract
3 tbsp Flour
Cane sugar and Rosemary to sprinkle

INSTRUCTIONS

Crust:
1. In a bowl, combine the flour, sugar, salt and cold butter
2. Mix using a fork, pastry cutter or pulse in a food processor until you get a grainy like texture. Small chunks of butter are ideal
3. Add in your ice cold water
4. Combine ingredients using your hands until a dough forms
5. Chill the dough for at least 30 mins.

Filling:
6. While the dough is chilling, start on the filling. In a bowl, combine your fruit, flour, sugar, vanilla extract and lemon juice
7. Mix until combined and flour is no longer visible


Crust:
8. Roll out chilled dough to an 11 inch round and transfer onto a baking tray
9. Add the filling to the centre of the crust - leaving a 1-2 inch gap around the filling
10. Start folding in the dough towards the filling, overlapping the corners
11. Ensure the corners are tight to avoid the filling from spilling out while in the oven
12. Beat your 1 egg and brush the crust with the egg
13. Sprinkle the crust with coarse sugar and slivered almonds
14. Sprinkle the filling with Fresh Rosemary
15. Bake your pie at 350F for 50-55 mins until the crust is golden brown
16. Cool and ENJOY!

Tip: serve fresh with some ice cream
