So easy& so good! Loaded Buffalo chicken sweet potatoes!
For this recipe all you need is:
• chicken breast
• salt and pepper
• your favorite Buffalo sauce
• chedda cheese !!
• Greek yogurt (in place of sour cream cause if you haven’t tried this you’re literally missing out. I will never buy sour cream again. Sour cream is legit overrated& a scam). #thanksforcomingtomytedtalk
• top with green onions
Bake your sweet potatoes at 400* until soft, usually an hour or so. When I make baked potatoes sometimes I just stick them in the oven and go do a few things around the house so by the time I remember them, they’re ready! (That could be a dangerous tip, so proceed with caution). Cook and shred your chicken. I only seasoned with salt and pepper because by the time you drench it in your Buffalo sauce, the seasonings don’t even matter at that point & I use A LOT of Buffalo sauce. Then just add the shredded chicken mixed with sauce to your sweet potato, sprinkle with cheese, add a dollop of plain Greek yogurt, and sprinkle with green onions. Such a good and easy recipe which even works well for meal prepping🤗
