This quick simple party starter always manages to impress. Marinated prawns draped around black olives, secured with a toothpick and pan fried.
PRAWN OLIVETTI - (Serves - 4)
Ingredients
16 medium prawns, shelled and deveined
16 black olives, pitted
Crushed black peppercorns to taste
Salt to taste
2 teaspoons mustard paste
1 tablespoon lemon juice
Oil for shallow-frying
Method
1. Take prawns in a bowl. Add crushed peppercorns, salt, mustard paste and lemon juice and mix well. Set aside to marinate for 10-15 minutes.
2. Place one marinated prawn around one olive and insert a toothpick with olive in the center. Similarly, prepare till all the ingredients are used.
3. Heat some oil in a non-stick pan. Place the prepared prawns and shallow-fry from both sides till golden and cooked. Drain on absorbent paper.
4. Serve hot.
