Amaranth leaves is highly nutritious and iron rich veggie makes a very healthy stir fry and serve with some steamed rice or roti tastes delicious. This is a very simple stir fry and the only time taken is to clean the leaves.

Red shen choy or Amaranth leaves - 1 bunch (about 500gm)
Onion - 1 medium( chopped)
Garlic - 3-4 cloves (chopped)
Red chilli - 1 (broken)
Chilli powder - 1 tsp
Turmeric powder - 1/2 tsp
Salt to taste
Jaggery or sugar - 1tsp
Fresh shredded coconut - 1/2 cup
Oil - 1tbsp
