Milk jam, also known as "dulce de leche" is caramelised, sweetened milk. Yes, as the name suggests, it is made of milk and sugar, and it tastes heavenly, with a very smooth mouthfeel. Prepared traditionally, dulce de leche is made by slowly cooking the sweetened milk until it is caramelised, a laborious effort that could take up to a few hours! Even the modernized way of cooking a canned sweetened condensed milk would still take a couple of hours.
