Old fashioned Cream Candy For The Holidays Or Any Season. I have included my recipe too.
2 C HEAVE WHIPPING CREAM
4 1/4 C SUGAR
1/2 C UNSALTED BUTTER
1/4 INVERTED SUGAR
2/3 LIGHT CORN SYRUP
1Tsp. SALT
ADD AT WHIPPING STAGE:
2/3 MARSHMALLOW CREAM
2Tsp Vanilla Extract
And other flavors or desired freeze dried fruits or chopped nuts.
STIR TILL IT BOILS. Cover 30 secs. Insert Candy thermometer heat to 242 F. Poor a damn onto cold buttered slab then poor the rest. Add flavors and marshmallow cream after FLICK TEST. Whip with bench scraper or stand mixer for 2 minutes let rest for 10 minutes. Do this 5 times until candy turns to cookie dough consistency.
