Hot & Spicy Fried Wings:
Ingredients:
Chicken wings 1 kg
Ingredients for Marinade
Milk 1 cup
Vinegar ¼ cup (Siblou)
Paprika 1-½ tsp
Garlic powder 1 tsp
Ingredients for Spice Mix
Salt 1 tbsp
Paprika 1 tsp
Onion powder 1 tsp
Garlic powder 1 tsp
Chili powder 1 tsp
Black pepper powder ½ tsp
Crushed red pepper ½ tsp
Oregano ½ tsp
Dried basil ½ tsp
Dried parsley ½ tsp
Thai Chili Sauce ½ tsp
Ingredients for Seasoned Flour
Flour 2 cups
Corn flour ¼ cup
Baking powder 1 tsp
Spice mix 1 tbsp
Ingredients for Egg Wash
Milk ½ cup
Hot sauce ¼ cup
Egg 1
Vinegar 2 tbsp (Siblou)
Ingredients for Hot & Spicy Glaze
Dynamite sauce ¼ cup
Butter 1 tbsp
Oil 2 tbsp
Brown sugar 2 tbsp
Chili powder ½ tsp
Prepared spice mix 1 tsp
Paprika ½ tsp
METHOD:
Mix together the marinade ingredients and leave the wings in it for at least 4 hours. Discard the marinade and pat dry the wings, mix together spice mix ingredients, prepare glaze by heating oil and butter, add all the glaze ingredients, when it boils and sugar dissolves, remove from heat. Beat egg wash ingredients, prepared seasoned flour mix, now pour spice mix on wings, coat each wing in seasoned flour, dip in egg wash, again coat in flour pressing it with fingers, coat properly, deep fry, then coat fried wings in prepared glaze, serve hot.

Black Forest Trifle:
Ingredients:
Chocolate brownies 6
Water ½ cup
Pineapple juice ½ cup
Sugar ¾ cup
Whipped cream 3 cups
Cherries pitted 1 can
Mixed fruits cocktail 1 can
Dark chocolate grated 1 cup
Chocolate syrup as required
METHOD:
In a sauce pan bring water, pineapple juice and sugar to a boil, as soon as sugar dissolve remove the syrup and cool it, spread a layer of chopped brownie chunks in a trifle bowl, soak generously with syrup, spread a good layer of whipped cream, top with cherries and fruits cocktail, add grated chocolate, top with some more cream and smooth, add second layer of brownies, soak it, then cream, fruits, chocolate, final layer would be cream with topping of cherries and lots of grated chocolate.

Jujeh Kebab:
Ingredients:
Boneless chicken cubes 750 gm
Ingredients for Marinade
Hung curd ½ cup
Vinegar 3 tbsp
Saffron essence ¼ tsp
Oil ¼ cup
Papaya grinded 1 tbsp
Garlic paste 1 tbsp
Roasted & crushed cumin 1-½ tsp
Salt 1 tsp
Black pepper 1 tsp
Brown onion grinded 3 tbsp
Sumac 1 tsp
Roasted& grounded coriander 1 tsp
Ingredients to Serve
Tomato half
Onion half
Oil to brush vegetables
Sumac for sprinkle
Green chilies 3
METHOD:
Apply all the marinade ingredients to chicken, leave it for 2 hours, skewer the chicken pieces on skewers, and grill or bake, or you can shallow fry in a grill pan. On another skewer put tomato, onion and green chili halves, brush them with oil and cook in oven or over open flame, serve the bbq grill kebabs on a platter with grilled veggies, sprinkle sumac over them before serving.
