Hate peeling hard-cooked eggs? Me too! Or I used to. I have done a whole lot of research AND used this method myself over and over to make sure it works. Always the same result, even with eggs that are pretty fresh from the grocery.
You might have an egg or two that just doesn't want to cooperate in releasing their shells but most will easily let go! Using eggs that are not right out of the chicken will definitely up your chances of being easy to peel hard-boiled eggs!
Instructions (easy to copy and paste for your records)
~ Choose an appropriate-sized saucepan for the number of eggs you want to hard cook. Gently place the eggs in your pan. Cover with cold tap water, making sure they have an inch of water above the highest egg. (I keep the eggs in a single layer)
~ Set the burner to high and when the eggs begin to boil, set your timer for 10 minutes. (Instead of standing there waiting, I set a timer for 3-4 minutes as they come to a boil) Turn down a notch or two so they are not at a hard boil but are still boiling.
~ Prepare an ice bath with at least six ice cubes and water. How much you prepare depends on how many eggs you cook. You can always add more because you want it to stay cold for the whole 14 minutes.
~ When the 10 minutes is up, pour out the boiling water. Then shake or bounce the pan so the eggshells crack all over. Then dump them into the ice bath for 14 minutes.
~ I peel mine as soon as the process is complete, but you can also store them in the refrigerator and peel as desired.
~ Store hard-boiled eggs in the refrigerator.
