GOTO is a type of Filipino congee and considered as comfort food. It consists of glutinous rice, jasmine rice, ginger, garlic, onion and topped with beef tripe, chicharon, hard-boiled egg.
Best served while it’s steaming hot and during cold or rainy weather.
Ingredients:
To remove the unpleasant taste of beef tripe:
500g local beef tripe
2 stalks of lemongrass
2 inches of ginger
1 head of garlic
1 tsp of pepper
4 cups of water
Goto ingredients:
2 inches of ginger
7 cloves of garlic
2 medium-sized onions
500g beef tripe
2 tbsp of fish sauce
1/2 tsp of pepper
3/4 cups of jasmine rice (soaked)
3/4 cups of glutinous rice (soaked)
4 cups of pork stock
2 cups of water
2 tbsp of kasubha or safflower
