In this third of three videos, I review the Nubatama 400 grit stone in the Bamboo series.
The knife I use in this review is a Kawamuki paring knife (This is the style of knife) It is actually a knife I purchased in one of the Tsukiji market's knife shops. This knife is a double beveled carbon steel - an Hitachi white steel. The stone has already been soaked from the previous two videos.
The edge has several small chips to begin with that I remove in this session. I demonstrate a technique for detecting chips using my fingernail, carefully avoiding my fingertip.
This stone works superbly for removing the chips and produces a remarkable edge for a 400 grit stone. It took me three videos to figure out that this stone seems to like carbon steel knives much better than stainless steel (at least this one Swedish steel), quickly abrading the knife to produce a fine edge on a coarse stone. This stone appears to work a bit slowly to accomplish it's task, but once it has, a bit more time on the stone gives it a chance to produce (again) a remarkable 400 grit edge.
