This red lentil soup recipe is delicious. It is also called Mercimek Corbasi in Turkey and it is a very common soup, so it's traditional. It is also common in mediterranean kitchen. And the cooking is painless. Full of amazing flavor, it’s made with all sorts of healthy ingredients, it’s naturally vegan(if you don’t use the butter) and gluten-free, and it’s so incredibly comforting and delicious.
So let’s start making the soup.
* 4 tablespoons olive oil
* 2 tablespoons of butter ( if you don’t want, you can choose not to add the butter. )
* 1 medium onion, chopped ( 1/2 large onion)
*2 teaspoons salt, plus more as needed
* 1 teaspoon of black pepper
* 1 cup dried red lentils
* 6 cups water or low-sodium broth
* 1 medium potato, chopped
* freshly squeezed lemon juice when serving
