This is a childhood favorite of mine, my grandmother and mother made and are still making Zacusca every autumn for the winter, it's a eastern European comfort food, you can imagine it like a marmalade just instead of fruits it's made from vegetables, I highly encourage you to try this recipe, and let me know what's your opinion of it if you did try it, and by the way you just serve it on a piece of bread.
This Zacusca contains the following ingredients in their order of cooking,
- 0.5 L ( 0.132 US gal ) cooking oil
- 1 kg ( 2.204 Ib ) grind onions
- 811 g grind carrots
- 3 kg ( 6.613 Ib ) grind sweet peppers
- 700 g tomato paste
- 4 g whole black pepper seeds
- 3 teaspoons of salt
- 4 middle sized bay leaves
- 700 g ( 700g dry mass ) precooked beans
- 1 teaspoon of grind black pepper
This has 0 food preservatives and will last up to 3-4 months in the fridge, if you want it to last more add some food preservative.
