🥣Ingredients:
3 sweet potatoes
salt tp taste
Italian dried herbs
oil

🥣Filling ingredients:
1 onion
150g | 3/4 cup tomatoes
130g | 3/4 cup cannellini beans. Alternatively use any other beans of your choice or chickpeas.
1tsp paprika
1tsp cumin
1/2tsp Korean chilli flakes (Gochugaru) (If you cannot find gochugaru, some alternatives include crushed red pepper flakes or cayenne pepper.)
1tsp Italian dried herbs
1/2tsp onion powder
salt to taste
120ml | 1/2 cup tomato sauce
250g | 7oz raw spinach
oil for frying (for oil-free version use water of vegetable stock)

🧑‍🍳Cooking tips:
❗Leftovers can be frozen or stored in the fridge for up to 3 days.

❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.

❗If you do not have Italian herbs mix available you can make it at home. The main herbs commonly used are oregano, basil, thyme, rosemary and garlic powder. Measure out the given herbs and spices, mix and store in an airtight container. This will stay perfectly fresh for 12 months if stored in a dark cupboard or drawer and in an airtight container.

🥣Method:
Halve 3 sweet potatoes lengthwise and poke a few holes with a fork.
Drizzle with oil.
Season with salt and Italian dried herbs.
Bake in the preheated oven 400F | 200C 30 minutes or until caramelised around the edges.
Heat a little oil in a frying pan (for oil-free version use water or vegetable stock)
Dice 1 onion and sauté for 5 minutes on a medium heat.
Cut 150g | 3/4 cup tomatoes and add to the pan.
Add 130g | 3/4 cup cannellini beans.
Season with 1tsp paprika, 1tsp cumin, 1/2tsp Korean chilli flakes (Gochugaru) - If you cannot find gochugaru, some alternatives include crushed red pepper flakes or cayenne pepper, 1tsp Italian dried herbs, 1/2tsp onion powder and salt to taste.
Mix until combine.
Take sweet potatoes out from the oven and let it cool down.
Pour 120ml | 1/2 cup tomato sauce and add 250g | 7oz raw spinach to the vegetable mixture.
Cook until spinach completely wilted.
Scoop out the flesh and mix with vegetable mixture.
Spoon the filling back into the potato skin.
Return to the oven for 10 minutes.
Serve with dairy-free yogurt, vegan cheese or guacamole.
