Pot Roast Beef Jamaican Style Recipe:
3 pounds Beef round top roast
2 tablespoons Vinegar
1/2 cup Red label wine or Red Wine
2 tablespoons Oil
1 medium Onion diced
1/4 of Bell pepper diced
2 tablespoons thyme chopped
2 stalks scallion chopped
6-8 all-spice berries
3 cloves garlic chopped
1 medium tomato diced
2 large Irish potato cubed
2 medium carrots cubed
1 tablespoon parsley chopped (garnish)
2 beef cubes
1/2 teaspoon salt
1 tablespoon all-purpose seasoning
2 teaspoons paprika
1 teaspoon browning
2 teaspoons onion powder
2 teaspoons garlic powder
1/2 teaspoon sazon powder (coriander and annatto blend)
Directions:
Pour the wine, and add natural seasonings in a food processor or blender and blend until purée.
Pour mixture over meat and rub all over the meat until well seasoned. Use a knife or meat injector and pierce a few holes into the meat.
Add powder seasonings and continue rub all over the meat to combine then set in the bottom shelf of the refrigerator to marinate overnight.
In a large pot add oil then place meat inside the pot and allow to brown/sear on all sides. Pour the blended seasons inside the pot and cover then allow to slow cook for 45 minutes to 1 hour.
During the last 10 minutes of cooking add some more natural seasons, whole hot pepper, potatoes, and carrots. Allow the vegetables to cook until tender and the gravy thickens. Turn off the stove, serve Beef with Gravy and your favorite side dish. Enjoy!
