This soup is the ultimate warming winter hot pot delight. You literally feel yourself getting hot and sweaty after one bowl. It’s a powerful tonic that replenishes blood and Qi, improves circulation, and detoxifies the body.
It’s very common to find this extra fragrant (some find it smelly) herbal soup as one of the more expensive selections on a hotpot menu in restaurants. The key ingredient is “dong quai” (aka female ginseng or 當歸), which is a powerful tonic herb that nourishes the blood, warms the body, and promotes circulation of Qi and liquids throughout the body. Use chicken as your protein and light tasting vegetables such as napa cabbages. You can add udon and vermicelli as these are tasty carbs that absorb the wonderful flavor of the soup.
