Budae Jjigae (Korean Army Stew)
Ingredients:
1/3 can of spam
A handful of your preferred mushrooms (such as enokis, shiitake, etc)
1 package of quality ramen noodles (Nongshim is a good choice)
Sausages
Tofu (firmer tofu works best, but I used what was in my fridge lol)
Fresh green onions
1 slice of creamy American cheese
Kimchi
Sauce Ingredients:
2 tablespoons gochugaru (Korean red pepper flakes)
1 tablespoon gochujang (Korean red pepper paste)
2 cloves of garlic, minced
1 teaspoon sugar
2 tablespoons mirin (sweet rice wine)
1 tablespoon soy sauce
Instructions:
1. In a small bowl, whisk together the following sauce ingredients.
2. Arrange the key ingredients in a shallow pan or pot, placing the sauce mixture in the center.
3. Pour water or stock into the pan until it covers the ingredients.
4. Cover and cook until it starts to boil.
5. Add the ramen noodles and allow them to cook for about 2-3 minutes.
6. Finally, add the slice of American cheese into the pan and continue cooking until it melts into the savory broth, creating a creamy texture.
