Ingredients and quantity

Tender Mutton (with bones) - 1 Kg

For Marination
Salt - 1 tsp
Coriander powder - 2 tsp
Kashmiri red chili powder - 2 tsp
Turmeric powder - 1/2 tsp
Garam masala - 1 tsp
Cumin powder - 1 tsp
Ginger - garlic paste - 1 tbsp
Yogurt (Dahi) - 4 tbsp

For Curry
Mustard Oil - 3 tbsp
Green Caradmom - 4 nos
Black Caradmom - 2 nos
Black peppercorns- 15 nos
Cloves - 8 nos
Cinnamon stick - 1 inch
Dried red chili - 2 nos
Onions (sliced) - 4 nos
Coriander leaves (chopped) - 2 tbsp

Method

1) Wash and drain the meat, apply all the ingredients mentioned for marination. Set aside for 40 mins
2) Heat mustard oil in a vessel, add all the whole spices mentioned for curry. Fry for 30 secs.
3) Add sliced onions and saute till light brown in color.
4) Add the marinated meat pieces along with residual water and mix well. Cover the lid and cook for 25 mins till mutton is cooked nicely.
5) Add more water if consistency of the gravy is less
6) Check for salt.
7) Finish it off by adding chopped coriander leaves.
8) Serve with rice or roti.
