The BEST jalapeno cheddar cornbread recipe in the land! This jalapeno cornbread recipe (AKA Mexican cornbread) is the most moist cornbread recipe you will ever have! This is a recipe inspired by Blanchard's Caribbean Cornbread.
INGREDIENTS
• 2-4 jalapeño peppers, seeds removed and small dice
• 2 cups all-purpose flour
• 2 cups yellow cornmeal
• 4 tablespoons baking powder
• 2 teaspoon kosher salt
• 1/2 pound or 2 sticks unsalted butter, cubed and at room temperature
• 1 cup sugar, golden sugar preferred
• 8 large eggs, at room temperature
• 3 cups or 2 small cans cream style corn
• 1 cup or 2 small cans crushed pineapple, squeezed and drained of excess liquid
• 2 cups shredded jack or mild cheddar cheese
• Butter, honey and finely diced chives for garnish (optional)
DIRECTIONS
1. Preheat the oven to 325F
2. Whisk together the dry ingredients; flour, cornmeal, baking powder, salt and set aside.
Using a stand mixer, cream the sugar and butter together. After fully creamed, add the corn, drained pineapple, shredded cheese, and mix to blend well .
3. On low speed, add half the dry ingredient mix and mix until blended, then add the other half and continue to mix.
4. Add the eggs one at a time, beating well after each adding each egg.
5. Mix in 2/3 of the chopped jalapeños into the batter and set aside.
6. Heat a large, seasoned cast iron pan over medium high heat for a few minutes and coat the inside of the pan with a knob of butter. Remove from heat and pour in batter. (DO NOT overfill the skillet and leave room for the batter to expand while baking.)
7. Evenly sprinkle the top of the batter with the remaining jalapeños and bake for about 1 hour and 10 minutes or until a toothpick or cake tester is clean and the cornbread is golden brown on top.
8. Let cool for 45-60 minutes before slicing. Serve slightly warm topped with a little butter, a drizzle of honey and freshly chopped chives. Enjoy!
