Ingredients:
° 1 inch thick Porterhouse Bone-In Steaks
° Favorite Steak Seasoning OR
° Kosher Salt
° Black Pepper
° Garlic Powder
° Paprika and Onion
Directions:
1. Coat steak in your favorite steak dry rub OR create your own dry rub. We first coated the steak on all sides in kosher salt. Add black pepper to both sides of steak. Then add garlic powder to taste. For extra flavor, add a small amount of Paprika, cayenne pepper, or onion powder.
2. Let steaks rest at room temperature for 20-30 minutes.
3. Remove slides from Gravity Series grill. Load with Charcoal, Light, and Set temperature to 225˚F.
4. Place steaks on middle rack in grill and smoke for 20 minutes or until internal temperature has reached 100-110˚F.
5. Pull steaks and let them rest. Crank grill temperature to 700˚F.
6. Put steaks on bottom sear grates for 90 seconds, flip, and sear for another 90 seconds.
7. Remove from grill and let steaks rest for 10 minutes.
8. Slice and enjoy!
