Tomato Sauce:
1/2 finely diced onion
1 rib finely diced celery
4 cloves finely diced garlic
2 anchovy filets
1/2 tsp red chili flakes(optional)
2 tsp salt
2 1/2 tsp sugar
1 tsp freshy grated black pepper
1 tsp dried oregano
1 tsp dried basil
1 tbsp tomato paste
1 tbsp extra virgin olive oil
1 28 oz can pureed San Marzano tomatoes (either "crushed" tomatoes or "whole peeled" tomatoes that are pureed)
2 tbsp Italian parsley
Chicken:
3 boneless skinless chicken breasts
2 tsp Salt (or to taste)
1 tsp pepper (or to taste)
2 eggs beaten
1 splash whole milk
1/3 cup all purpose flour
1 cup plain panko
2-3 tbs p freshly grated parmigiano reggiano cheese
1 1/2 whole milk low moisture mozzarella
Spaghetti:
1/2 lb spaghetti pasta
1/4 cup kosher salt
This makes three portions.
