Here is the recipe for making perfect chewiness ramen noodles recipe from the house of Foreign Tadka. I am having experience in making Ramen noodles and this is one of my perfect homemade Japanese Raman noodles recipe which I am sharing with you.
Ingredients:
1 cup all-purpose flour/Maida
1/4 cup lukewarm water
1/4 cup potato starch/cornstarch
1 tsp baked baking soda(aka sodium carbonate)
pinch of salt
*Preheat oven to 170C and bake for about 1 hour( temperature depend on oven capacity and power) For my recipe it was complete within 45 min
*Heating baking soda makes it transform from sodium bicarbonate into sodium carbonate, which is a stronger alkaline salt. Baked baking soda is useful for applications in which a strongly alkaline salt is required, such as in making ramen (noodles).
*Bake, stirring the baking soda every half hour, until the weight of the baking soda is reduced to 613g (~21 oz.), which is 2/3 of the starting weight (weigh the baking sheet with the baking soda, then deduct the recorded weight of the lined baking sheet to understand/judge the weight of the baking soda itself)
*Remove from the oven and, when cool, store in an airtight container; be careful not to handle the baked baking soda with bare skin.
