In our recipe, I made sure the pork belly is tender. While others want their adobo dry and oily, I want to have mine with enough sauce to put over the rice. It is so good and very satisfying, makes my tummy happy.

You will definitely love our Pork Adobo sa Atsuete, SARAPlicious it is!
Ingredients:
* 500g pork belly (liempo)
* 1 Tbsp atsuete (annatto) seeds
* 2 Tbsp cooking oil
* 5 garlic cloves, 1 small white onion, 1 thumb-size ginger
* 1 cup water
* 1/4 cup soy sauce
* 1 tsp black peppercorns
* 3 bay leaves
* 1/3 cup vinegar
* 1/2 tsp salt (to adjust the taste)
Procedure:
1. Heat oil in a pot. Add the atsuete (annatto) seeds. Mix until the oil turns to red color, then remove the seeds.
2. Sauté onions, garlic, and ginger.
3. Combine the pork belly. Mix then cover.
4. Add water, soy sauce, and black peppercorns. Cover and simmer.
5. Add bay leaves and vinegar. Let it simmer for 10 minutes without mixing and covering to allow the acid to evaporate.
6. Mix afterward and let it cook until the pork becomes tender.
7. Check the taste. Adjust by adding salt.
8. When the sauce has reduced and pork is fork-tender, it is done.
9. Serve with steamed rice. Enjoy!
