In today's video we make vegan beyond beef rolled tacos/ taquitos! We talk about the best things to do at the Grand Canyon, Brittany's new serving/ bartending job and where we see ourselves in the future/ possibly leaving LA.

Recipe:
1/2 onion diced
2 cloves garlic
2 12 oz packages vegan beef- I used beyond beef frozen crumbles and Trader Joes beefless beef
2 tsp chili powder
1 tsp cumin
1/2 tsp smoked paprika
Sprinkle of cayenne powder
Salt and pepper
1/2 cup tomato sauce
1/2 cup (ish?) veggie broth
1 bag vegan cheddar cheese shreds
20 corn tortillas
Oil for brushing
Cook the onion and garlic in a pan until soft. Add the rest of the beef to veggie broth and bring to a simmer for about 10 minutes. Mix in the vegan cheese at the end. In a separate pan warm up the corn tortillas and keep them in a coverd plate or bowl until ready to roll (this will make them less likely to break) Scoop out 2 spoonfuls of the mixture into a corn tortilla and roll it up. Place on an oiled baking sheet. Brush the rolled tacos with a generous amount of oil. Bake for 20- 25 minutes at 400 degrees.
