Sometimes the most simple f***ing tricks are the ones that come in handy the most, even in a professional kitchen. Here are a couple of my favorites.
1. If your cutting board keeps sliding around on your counter, just put a wet towel down under it. It'll keep it from moving while you're cutting and be much, much safer for you.
2. Tenderizing chicken doesn't need to be done with a mallet and, honestly, this tip keeps things cleaner as well. Just put the cutlets in a plastic bag and pound them out with a frying pan or a rolling pin. Works just as well.
Listen, guys, you don't need fancy gear and gadgets to get the job done. As long as your meal tastes good and you're proud of it, you're doing great.
