It's hard to beat the simplicity and practicality of dump & bake casseroles! I'm sharing 3 balanced vegetarian casseroles that highlight white rice, pasta, and quinoa.

I use a 9x13-inch baking dish for most of my recipes. Mine is from Magnolia Home at Target but any basic one will do.
-No lid? Foil or an upside-down baking sheet works.
-Trying to cut back on oven time? Simmer the liquids while prepping vegetables.
-White rice and quinoa can be swapped with each other with no other changes need.
-To make the casseroles vegan, simply use your fav vegan shredded cheese.
