Is goose considered poultry? Yes! Goose is my favorite, no 1 poultry to cook with. Goose legs are so tender and tasty if you prepare it in the right way! This meat doesn't need seasoning, only some salt and it's get extremely tasty. It has a good amount of fat in it, so it also keeps its moisture and the texture and the taste of the goose meat is so freaking good, that you cannot tell it is poultry. But hey, it is! Goose considered as white meat, so you can have it in your diet just the way as you would have chicken.
If you follow my guidance of cooking goose legs you will able to make duck legs as well. It is something truly fancy, but the price of these poultry is far away from a wagyu steak and even cheaper than a USDA choice or prime steak.
In this video I show you how to make goose legs with a crispy skin, and tender meat inside. I also show you my idea about the perfect side dish, and the ultimate meat sauce. The side dish is some potato dumplings stuffed with some caramelized onions. The perfect meat sauce is made of the rendered fat and leftover sticky bits from the baking tray together with some red wine. Caramelized meat chunks and red wine based sauce is always winning when I make meat sauce or gravy.
