Here's my version of Tofu and Shiitake Mushroom Soup that's super-easy and delicious.

Ingredients:
1 Tbsp. olive oil
2 cloves garlic, minced
1 whole white onion, diced
1/2 cup diced chicken breast
1 cup shiitake mushroom
2 Tbsp. oyster sauce
3 Tbsp. cornstarch, mix with 3 tbsp water
2-3 cups of water
ground black pepper and salt to taste
8oz soft tofu, drained and cubed
3 Tbsp spring onion, chopped
Instructions:
To a pot/pan over medium heat add olive oil, garlic and onion. Sauté for a couple of minutes. Add shiitake mushrooms, oyster sauce, cornstarch mixture and water. Turn the heat up to high and bring to a boil. Reduce the heat to medium, and add tofu, and green onions. Let simmer for about seven minutes, or until the soup is thicken. Serve while its hot. Enjoy!
