CLASSIC ENSAYMADA

✔️Ingredients
1 cup lukewarm milk (fresh or evap) [240 ml]
2 tbsp sugar [25 grams] (for yeast proofing)
2 tsp yeast (7 grams)
1 large egg
1/4 cup sugar [50 grams]
2 & 1/2 cups all purpose flour [320 grams]
1/2 tsp salt
3 tbsp butter or margarine [45 grams]

✔️Topping
70 grams butter / margarine
1/3 cup sugar [70 grams]

*extra egg (for egg wash) optional

⁉️Read me!
•Every flour may absorb liquid differently, so for some will find the dough too wet then add up flour if it needs it.
